For a newbie, would it be a good strategy to "middle" 2 offshore books to take advantage of the bonuses? IOW, bet one side with one and the other with the other for zero risk minus the juice. Can a profit be made, and one that is large enough to be of interest?

Many do this. How much profit you make depends on your
available bankroll, & how much time you have to risk it.
But you are not going to make a living.

Between 5 and 7 years ago the answer would be YES. Books had different numbers and bonuses were great. Today it's very difficult to make a profit without having many hassles along the way. Also back than everything wasn't so peachy because at some shops it was very difficult to get paid. Just like in life and in real estate the early bird catches the worm. It's too late to make easy money in the offshore world.

Three to four years ago it was possible to make over 4G a month
scalping & bonus whoring FT. Within the last year in about 3 months
PT $2000 or so exclusively related to bonuses. NFL preseason seems
the best time for free cash, Bonus Plays, & such. Then there's the
easy money in BJ & poker.
